My Award Winning Chili Recipe

When I moved storiesofourboys.com from wordpress.com to Bluehost, I accidentally left out the recipe section.  Oops!! There were just a couple of the recipes I decided I need to add back, as I have had more than one friend mention these recipes, and I know you need them to stay put, for reference. Don’t you hate it when you’re in a pinch, and the recipe you were using just disappears from the internet???

So, here it is: My first prize chili. Sorry I don’t have a picture, but um, it just looks like beef and bean chili. The true secret here is the packets of ranch!

First Place Chili

 
I entered this chili in a chili cook-off and won first prize.
To make it less Hot (which is what I do when I make it for Alan’s parents), just use 1 Taco Seasoning Packet, rather than 2.
 
Ingredients:
(I always use 15/16 oz cans for canned goods, except where otherwise specified.)
1 lb lean ground beef or grd. turkey
1 med. onion, chopped
2 envelopes Ranch dressing mix
1 can black beans (undrained)
1 can pinto beans (undrained)
1  10 oz. can diced tomatoes w/ chiles (Rotel, undrained)
2 envelopes taco seasoning
2 C water
1 can kidney beans (undrained)
1 can tomatoes (undrained)
At finish:
Shredded Cheddar cheese
 
Directions:  So easy!  Brown ground beef AND saute onion until onion is translucent.  Drain meat  (unless you have fat-free turkey ground, which really has nothing to drain).  Return beef and ALL remaining ingredients (except shredded cheddar) into the pot and bring to a boil.  Reduce to simmer, cover, and cook about 2 hours.  At the end of the 2 hours, go ahead and dump 1-2 cups of shredded cheddar into the pot.  I think that’s how I won the contest, the pre-added cheese!  ; )
